Making the ideal cheese product: optimising cheese manufacture by product and consumer understandings



    This dataset comprises questionnaire responses to an online survey of Scottish cheese consumers investigating attitudes to Scottish artisan cheeses and cheesemaking. In particular, this research had the specific aim of investigating consumer knowledge on un-pasteurised cheesemaking benefits and risks. There are also transcripts of focus groups (5 in total) run investigating the same topic so that a mixed methods approach (qualitative and quantitative) could be adopted.
