Abstract

According to Countdown's annual Trolley Report, Kiwi shoppers put more than 20 million loaves of bread into their trolleys each year. Sharon Forbes and Sue Trafford from Lincoln University's Faculty of Agribusiness & Commerce set out to examine what bread we are buying, why and how it compares with research undertaken 40 years ago.
