Abstract
Acrylamide detection still represents a hot topic in food chemistry. Solid phase clean up, liquid chromatography and tandem mass spectrometry are the golden standard procedure for its quantification. A method for acrylamide determination using high resolution mass spectrometry (HRMS) detection was developed. The procedure applied a simplified extraction and a 4 min chromatography. The mass accuracy was 0.1 ppm, the LOD 2.5 ng/mL and LOQ 5 ng/mL. The method was tested on cookies, French fries, ground coffee and brewed coffee. Results were in line with those obtained by tandem mass spectrometry.
